Let us know how that striker project goes!
(I'm less positive about a double set trigger because I flip shotgun and rifle barrels constantly and am unsure how a double set trigger would work on a shotgun where "quick" is essential. And I remember the only other US hammerless break action "stalking rifle" I can think of, the TCR-83 and some of its problems).
Mike, as I was rereading this, I had a thought. Sometimes that can be dangerous from me! :-) I have a Mannlicher/Schoenauer made in 1905 with double set triggers. The front (set) trigger does not have to be "set" to fire the gun. When it is not set, it functions like a "double stage" military trigger and will fire the gun. If the new after market trigger sets function the same way, you should have no problem (with a shotgun barrel on the action ) with making quick shots.
